Title: The Breakfast Thread
Post by: evil_physics_witchcraft on July 10, 2020, 09:11:35 AM
Inspired by ab_grp's post in the "Dinner" thread.

We are about to break our fast, at 12:!0pm EST. On today's menu:

Beverage = Coffee with milk and sugar

Side = Toast with butter and apricot jam

Main course = Scrambled eggs with hot sauce

Yay! I'm still hungry and getting hungrier.  I think we will have slightly runny fried eggs and leftover potatoes from last night and split an everything bagel.  Or maybe we will each have a bagel.  We have veggie cream cheese and jalapeno cream cheese (which actually also goes really well on cinnamon raisin bagels? spouse tried that, being the jalapeno fiend, but it really is yummy!).  Beverage is and will be plain old coffee without accouterments (and water).

What kind of apricot jam do you get, or do you make it? We have a couple varieties from Bonne Maman.  I think the apricot is preserves, but it's so good.  Now I want to make popovers.

Say more about the hot sauce, please.

The same thing I have every day: a bowl of Nature's Path cereal with two teaspoons of regular Ovomaltine/Ovaltine on top, with skim milk.

Guess I have nothing much to contribute here.  My standard breakfast is a glass of juice.  What fruit it comes from does vary now and then.  I only eat a solid breakfast when I'm traveling.

Late start brunch:

Two eggs, cheese added, scrambled and microwaved
Two small breakfast sausages
Happy Jack hash browns [Once with Happy Jack and you wo..uh, you'll be thrilled!]
One toasted plain bagel, buttered, and covered with a Smuckers Strawberry spread
1 single serving cup applesauce

1 cup half DeCaf and 1 half Caf cofee

Organic oatmeal with egg, raisins, and dried cranberries. (My mom buys it by the pound in the bulk foods aisle from the organic store in town) Fresh blueberries (in season) and milk added. I'll also eat an orange with the oatmeal.

Oatmeal with milk and a diced fresh peach.  Yum!  This will continue to be my breakfast until the peaches run out.  Normally I add pecans, but I forgot today.  Today's tea:  BeerButter (https://www.adagio.com/signature_blend/blend.html?blend=7662) (black tea flavored to taste like Butterbeer from Harry Potter, comes in a cute tin).

Each AM, early:

1/2 chocolate croissant
1 cup cocoa

Second breakfast: c. 10 AM or so.

1/2 egg sandwich (or, occasionally, an omelette, or waffles, or pancakes, but usually the egg sandwich)
1/2 slice of toast with raspberry, apricot, or strawberry jam/preserves etc.
1 cup/tea (first of many for the rest of the day).

This morning:
Avocado toast: homemade sourdough, avocado, feta, garden tomato, scallion, everything bagel seasoning
Homemade cold brew coffee with milk, in a mason jar.

I know this breakfast makes me look like an insufferable hipster but it was damn good and I won't apologize for it ;)

So many yummy ideas.

I ordered more jalapenos and apricot jam (actually preserves). It's the same brand that you mentioned ab_grp. I used to buy a French brand from the farmer's market, but I haven't ventured up there in some time. BM is still pretty good.

Edit: Oh, and hot sauce is a must on eggs. Definitely.

Avocado is fine. Whatever happened to the Bloody Mary as a breakfast beverage?

2nd edit. I meant to say that I used to buy a different brand of French jam/preserves, since BM is also French.

Also, maybe Mamselle has half a sandwich today and the other half tomorrow? Chocolate croissants though..... yuuuuuuum.

Oatmeal with fresh peach again.  This time I remembered to add pecans.  Today's tea:  Earl Grey cream tea (https://birdonawirecreations.com/collections/karlas-specialteas-1/products/karla-s-specialteas-organic-tea?variant=15826217697347) with cream and a little sugar.  This is one of my favorite Earl Greys.  I have to special order it from Canada.

The egg sandwich is made whole on a muffin every other day; I divide it in half and save that for the next day. Saves time, calories, and cholesterol intake...win-win-win.

Well that makes sense. I was just impressed at the half of many things.  I don't have enough brain power in the morning to attempt half-portions of multiple things. My breakfast is not worthy of this thread--either toast and coffee or oatmeal and coffee. Black coffee.  When I'm really motivated, toast, egg, and coffee. But I do like to read everyone else's amazing breakfasts--maybe I'll try some of them for lunch.

Whole wheat toast > a schmear of Vegemite > a blop of guacamole > slice of bacon/Canadian bacon > poached/fried egg on top > hot sauce.

I spent a couple of years in Oz and got a taste for Vegemite.  For most Americans, it seems that Aussies have taught their children to eat shoe polish.  I disagree. Food of the gods when prepared in this fusion cuisine, wot I has invented all by meself.

My chocolate croissants are in halves because it's easier to find good whole croissants, split them, and insert a triangular half-square of Ghiradelli's 72% dark chocolate every morning than find a good source for real 《pain chocolat》.

Heat for as long as it takes the teakettle to boil and the chocolate gets good and gooey...mmmmm.....

We had an everything bagel with veggie and jalapeno cream cheeses and a fried egg over mustard roasted potatoes with parsley and tomatoes.  I really like these potatoes with the eggs!

Saw your mustard roasted potatoes discussion on the dinner thread...

Yum!

Might also be good paired with a pork or beef roast (in fact, a spoonful of powdered mustard is what one French friend puts in all her pork roasts: slight bit of water, turns it once, and leaves it in the bottom of the pan to bake, covered, for a couple of hours...)

<<walks off, singing, 'Nooooooo, I have work to dooooo!!!'......>>

Two cups of tea this morning:  Adagio chocolate truffle (https://www.adagio.com/flavors/chocolate_truffle.html) with cream and sugar (nice chocolatey black tea that doesn't taste fake), and August Metropolitan (https://august.la/products/metropolitan) ("vibrant black tea with bergamot, plum and clove").

I'm working on my plans for an upcoming staycation.  Since people can't socialize inside because of COVID, but it's super hot outside, I'm thinking breakfast outdoors will be a good option.  Toward that end, I'm about to go shopping for patio furniture, and I've been thinking about breakfasts that can be prepped in advance and easily carried outside (i.e., not last minute stuff like fried eggs).

Breakfast al fresco (or "with Al Fresco" from the book I'm reading) sounds really nice.

I hope my friends will think so too.  I had no luck buying patio furniture this morning.  Everything is fancy and heavy.  I really just want the cheapo lightweight plastic kind because I anticipate regularly carrying it between front and side porches.  (One has shade, and the other has a roof in case of rain.)
Title: Re: The Breakfast Thread
Post by: ab_grp on July 13, 2020, 02:02:53 PM
That sounds just like our house! We have two sets of furniture, so we don't have to move it, but it's meager.  Each patio area has a love seat and a coffee table.  The one with the roof, which is facing east and impossible to use for half the morning but is the favorite, also has two side chairs.  I would like to have more of a dining set, but I don't think we have enough room.  We got our furniture from Home Depot, and it's mostly metal and/or glass (one table top).  We also have some sturdy folding plastic chairs from Sam's that we take from place to place as needed.  Have you considered a folding table? That might be pretty portable.  I think it can feel so decadent to eat outside! I hope you have better luck with your furniture search.

Thanks, ab_grp.  I have one more local store to check, but maybe I can order online if necessary.  None of the folding tables I saw online stood out to me (the one I liked had bad reviews), but I should try another search.  As you say, it would be good for portability.  Hopefully I can get this sorted tomorrow.  I'm excited to eat outside!

This morning I supplemented my oatmeal with a scrambled egg so I could make it through gym class without getting hungry.  (The scrambled egg was separate, not mixed with the oatmeal.)

I have new teas!  This morning's tea:  August Know by Heart (https://august.la/products/know-by-heart) ("White tea with orange blossom, almond and honey").  It smelled amazing, but the flavor wasn't as strong as that led me to expect.  Maybe I'll steep it longer next time.  I was able to taste the honey flavor, though.

Yesterday morning's tea:  August Cabaret (https://august.la/products/cabaret) ("Malty black tea with chocolate and dark cherry").  It was okay, but I have other fruit-and-chocolate teas that I like better because they have a more complexed, balanced flavor.  In particular, I prefer August Breathless (https://august.la/products/breathless) ("Silky black tea with white chocolate and brandied prune notes") and Adagio Veritaserum (https://www.adagio.com/signature_blend/blend.html?blend=34123) (chocolate raspberry black tea).  Those both contain hazelnut, which I think helps a lot with the flavor.  Still, I'll try adding cream and sugar to the Cabaret next time to see if that improves it.

I hosted my first socially distanced outdoor breakfast.  It went perfectly--we even had cool(ish) weather.  I made bacon-cheddar-spinach quiche and oatmeal chocolate chip muffins.  I also served fresh fruit.  I'm excited about doing this again soon if I can talk another friend into it.

One of my latest teas went very well with the chocolate chip muffins:  August Passage (https://august.la/products/passage) ("Rich black tea with hazelnut and chocolate").  It has a nice, balanced flavor--not too much of either chocolate, hazelnut, or tea flavor.

We had another brunch to fill spouse up before he had to go on site (hard to eat with the protections in place).  So, another set of eggs over leftover roasted sweet and mini potatoes with everything bagels with veggie and plain cream cheese (sadly, ran out of jalapeno).  That roasted mustard potato recipe I posted before here or on the dinner thread (from Ina Garten) suggested parsley on top of the potatoes, and I have been putting it on my breakfast potatoes since.  Yum.

I love breakfast. Also I greatly enjoy eating it in leisurely quiet while everyone else is sleeping.

Today: cheese blintzes (from the frozen foods aisle at the grocery store, not ones that I made myself) with sour cream, blueberries, lemon flavored tea.

This might be a silly question or more detail than you feel like typing out, but I'd love to hear more about tea pairings if you feel like sharing. I drink tea with most of my breakfasts, but I normally just buy some teas that I like and drink whatever I'm in the mood for that morning along with whatever food I'm eating. The decision about which tea to drink is completely separate from the decision about which food to eat. What kinds of things do you look for when you pair tea and food? This conversation makes me think of wine pairings, but I don't drink alcohol, and if I did I would probably manage it the same way as I currently manage tea (pick food and wine separately, consume them together with no thought about how well they go together), so any analogy to wine pairings is probably going to be lost on me.

Thanks!  My dream job is to be menu planner for a bed and breakfast, if in fact that were a real paying job.  Since I've gotten into teas in the past couple years, now I can imagine that my menus would include tea pairings.

Fun question!  This might be too idiosyncratic for my opinions to actually work for anyone else, but I like thinking about it.  (No analogies to wine pairings here--I only barely tolerate wine.)  Another disclaimer:  I only know about herbal teas and flavored teas.  I don't know about, say, all the different kinds of black tea that allegedly have subtly different properties.

Anyway, I guess what I'm looking for is a tea that has some similarity to the food but not too much.  If the food involves fruit, maybe I'd have a fruity tea but one flavored with a different fruit.  With a sweet food, I'd pick a tea that's somewhat sweet but also somewhat bitter, and I'd be less likely to add sugar to the tea lest the meal become cloyingly sweet.  The history or national origin also affects my perception.  I like Earl Grey with pastries--seems very British.  I like green tea with Asian food, even though I otherwise don't usually drink green tea.

I don't drink much tea anymore, but this is a really interesting discussion! And being a menu planner for a bed and breakfast, with tea pairings, sounds like a great possibility.

I would like to become more interested in teas. This morning, I stepped away from my usual coffee and had some Darjeeling tea (which is very good with milk, cinnamon, clove, ginger and cardamon [like chai]).

Sounds delicious.  Did you add the spices yourself, or was it a blend that already included them?

I mix them in myself. I usually put whole spices (except for ginger- powdered, haven't tried it fresh) in a tea ball, or you can simmer them in milk on the stove. When I'm feeling lazy, I'll used powdered spices. Just make sure you blend it well.

I had another friend over for a socially distanced outdoor breakfast.  The main course was baked blackberry oatmeal (http://katieatthekitchendoor.com/2013/08/03/hectic-times-baked-blackberry-oatmeal/) with maple syrup.  We also had sausage, fresh peaches, and tea.  I set out hardboiled eggs as an alternate protein in case my friend didn't like sausage, but we ended up not needing them.  I think it was a very successful social activity.

Liquidambar, everything about that sounds fabulous. Delicious food! Time with friends! Being outside!

I've also been eating oatmeal more recently, but not anything as interesting as what you linked to. I just mix water with Quaker Oats, microwave for a minute or two, and then add fruit. I have learned that this makes me actually like oatmeal, as opposed to just eating it plain, which my taste buds did not like. Today I added fresh blueberries and mango slices. Yum.

Beverage = Darjeeling tea (bag) with a few slices of fresh ginger and 1 tsp. of sugar.

Main course = Oatmeal with a pinch of cinnamon and sugar.

Entertainment = Youngest evil cat chasing Elder evil cat around the room. She really gave him a workout.

Burrito bowl (rice, beans, melted cheese, sour cream) with a side of blueberries and some pomegranate-flavored tea, to go with the suggestion above to pair fruits with teas flavored with different fruits. I am currently watching steam rise out of said tea and finding that to be a soothing way to start my day.

Lemon curd on hot buttered toast.

My sister and I discovered this delight in the UK in 1973, when we cycled through parts of England and Scotland.

So I'm pairing it with hot, black darjeeling tea...

.....and memories of puffing up the Cotswolds, in order to, as a fellow hosteller once said, be able to go "whizzing down the other side!"

Lemon curd on toast sounds delicious.

I had cookies for breakfast.  But they're oatmeal, so that's healthy, right?  I needed a little food to keep me going until an early lunch.  (I just realized that I paired chocolate chip hazelnut cookies with chocolate hazelnut tea.  Not on purpose, but it was tasty.)

I made a batch of coconut tahini granola (spelt flakes, oatmeal, nuts, dessicated (unsweetened) coconut, sunflower & pumpkin seeds, honey + tahini) this weekend, and my nectarines and pears are just coming right this week.

I also now have some fruit chilling in the freezer, so I've been also making smoothies.

Main course = 2 pieces of homemade toast + apricot jam + butter

Husband decided to do a take-off of the Portuguese scallops we had recently, so we had the remaining leftovers of that dish over eggs on whole wheat toast with parsley and tomatoes.  It was yummy!

Because spouse had to go in to work early today, we made some breakfast burritos last night so he could take one with him on the road.  I just ate mine, and it was really good! Haven't had one in a while.  We made some scrambled eggs, cut up some breakfast sausage, put in some Mexican cheese blend, some cut up jalapenos he had roasted, and some leftover roasted mini and sweet potatoes.  I could deal with another! I think the sweet potatoes added a nice flavor.

New yummy breakfast spread: equal parts lemon curd, honey, and crushed pineapple.

Or just the lemon curd and the honey. Or the pineapple with either one....

Oatmeal cooked with dried dates, dried apricots, and dried cherries. Plus a bit of very dark brown sugar for added sweetness that, in retrospect, was unnecessary given the sweetness of the fruit.

Those crumpets are my go-to base when I need something to put homemade jam on.

I made a pot of steel cut oats and have been reheating some every morning.  This morning I'll probably throw chopped up cherries on them before heating, since I have cherries that need to be used soon.

I've been on an orange kick lately.  The ones in local stores have been really good this winter.  So, today's breakfast was a couple of slices of toast with butter, a juicy orange, and iced tea.

It's been a while! Sundays we have a different breakfast these days.  It usually consists of eggs of some sort and bread of some sort, usually with avocado and some other stuff.  I recently came across a viral recipe for crispy feta eggs, so we tried them the past few Sundays (and last Monday because of the holiday).  The original recipe I found includes fried egg cooked with oregano, red pepper, and feta in a tortilla covered with a layer of avocado and topped with crisp chili oil.  Today we tried switching to scrambled eggs and halving the feta to reduce sodium and so forth.  It's always pretty good and easy and nice change.  The crisp chili oil we picked up isn't really crispy, as some TikTok video suggested it might be, so maybe we need to try another one.

Note: I see that this is flagged as an old topic, but it's only on the 6th page (so not one that would be archived, I don't think), and I don't think it makes sense to start a new topic on breakfast.  If I was incorrect in proceeding in this thread, please feel free to delete or move it.

Early morning outing, so coffee (the equivalent of a double espresso with steamed half and half) and a banana before heading out, and an egg salad sandwich (on challah from a local grocery) as I was waiting for the event to start.
