If you have three working days, then the fact that you have graduation ceremonies during the weekend should be irrelevant since the weekends aren't working days.

For graduating students, we have three business days from the last class if not giving a final and from the final if giving a final, unless you are unlucky and have Thursday or Friday final, in which case they are still due by Sunday. Each department must then hold a "check out" meeting to officially certify degrees (a formality except voting on level of honors for honors thesis students, the registrar's office does the actual checking), after which there is a ceremonial vote to confer all degrees at the general faculty meeting. None of the "voting" means anything, but it allows them to say at commencement that their degrees are conferred upon them by a unanimous vote of the faculty, which I suppose is a nice bit of pomp and circumstance.

For all other grades we have ages-- two full weeks from the last final exam.

Our last finals end on a Friday at noon, and we have until the following Thursday at noon to submit grades.  It seems like a reasonable amount of time.
