Dinner--or Dessert--Tonight

Fetched a Chicken Sandwich from a well known purveyor of same
Prepared imported Mac &  Cheese ( Aldi's = Imported? )
Nuke In Bag Veggie Mix from Geen Giant ( Hope He's still jolly!)
Big box Diet Cola (  Not too bad when one gets use to it.)

Note: Lefftover side dishes will be perfect with bunless hotdogs tomorow!
So, I tried to straighten everything out and guess what I got for it.  No, really, just guess!

You could also make a hot dog casserole!

While 4 oz of wheat penne  is cooking, scrounge through refrigerator and pantry.

Locate some leftover guacamole, a can of diced tomatoes with onions and peppers, and a can of tuna. Drain excess liquid, pour in a bowl, and heat (700 watt microwave, 2 minutes).

Drain penne, stir into bowl of warm tuna/tomato/guacamole. Think it could use some garnish, then shrug and eat half. Cover remainder and refrigerate for lunch tomorrow.

Something with fruit. You need fresh produce with every meal.

I can estimate what was done (since I didn't make it- the other half did).

Here's what he told me:

1 c. kidney beans (or maybe a can- we usually batch cook dry beans and freeze)
1 c. corn
1 c. Bob's Red Mill TVP (soaked for about 10 min. beforehand)
maybe 1 T. tomato paste
maybe 1 c. or so tomato sauce
salt to taste
cumin to taste
garlic powder to taste
cayenne pepper to taste
onion powder to taste
oregano to taste

I'd probably try about a 1/2 tsp. of the spices at first (except maybe the cayenne- depends on how spicy you want it).

Throw it all together and heat it up in a pot. Eat.

Thanks! We like it spicy around here. My dessert tonight is extra-hot chana snack mix. My cooking skills pretty much involve throwing things into a pot (other half is the chef), so things sounds like I might be capable.

Yep. Chili is forgiving. I'm all aboard the spicy train too. I've had the roasted chickpeas as a snack. Do you make them from scratch?

No, other half would be capable of making from scratch, but we prefer to support the local Indian grocery for our snack needs.   Other half apparently thought that there might be a run on chana snacks when he went shopping yesterday, and he brought home four different varieties.

To make my life easier, I've been planning out dinners a week at a time. The unexpected upside is that I get to look forward to dinner all day, rather than dread having to figure something out at 4:30 when my kids are expressing their boredom and ennui.

So tonight: fish and black bean tacos, with "fresh" salsa (in the sense that I'm making it, even if the tomatoes are from a can)

Tomorrow: spaghetti with homemade tomato sauce, filled (I predict) with veggies

Wednesday: pizza with our favorite curry-flavored sausage as a topping

Thursday: leftover pizza

Friday: tofu/veg stir-fry with homemade teriyaki sauce (and all the vegetables that have been in the fridge long enough that they're better cooked with than eaten raw)

I made some Lemon Bars and they're good! I made the following substitutions- crumbled digestive biscuits and pancake mix for the crust!!! We tasted a few and they are now being chilled for dessert tonight.
