Will gazpacho and crusty baguette be sufficient for a light lunch?  If not, what else might I serve that is meatless?

Maybe have a couple of options for spreads / other things to go with the baguette.

I keep coming back to this thread because I'm hungry... It occurs to me that you might want to have a salad too.

I love gazpacho and baguette.

I second the idea of a few different spreads for the baguette that may make the meal more filling, e,g, cheesy, or beany, or vegetably.

Some gazpacho recipes are made with blended almonds that will also add some heft.

'Meatless' comprises a universe of food.  What else do you and your guests eat or not eat: e.g. cheese, lentils, beans, (lentil or bean patties are outstanding), roast veggies, eggs(?),

What's for dessert?

Well, what exactly do the Spaniards, the inventors of the stuff, do with it in terms of when/ where/ how to serve it?

Sure. But soup is absolutely an entrée, not a main.

Alternatives? Smashed chickpea sandwiches? Big Mac salad? Taco salad? Pasta?
I know it's a genus.

Basically, a basic salad (romaine, red onion) with crumbled tofu or pea protein ground (with garlic and onion powder, nutritional yeast, paprika, and soy sauce), shredded cheese or vegan cheese, and homemade big mac sauce (paprika, vegan mayonnaise, Dijon mustard, garlic and onion powder, apple cider vinegar). A big mac in salad form.

You can fancy it up as much as you like, of course. You could add kale, pumpkin seeds, corn... Whatever. It's robust and forgiving. The crunch of romaine hearts, the sauce, and the ground are the key elements.
I know it's a genus.

Thanks everyone.  I like the idea of a few spreads/toppings for the baguette.

Remembering the old restaurant joke about being so stupid you thought "Gus Pacho" was the president of Mexico makes this thread very entertaining to read!

Having a dinner party and making peach gazpacho for a starter.

My wife occasionally makes gazpacho with watermelon. It is excellent.

Nothing like a steaming bowl of gazpacho on a winter day.
And you will cry out on that day because of the king you have chosen for yourselves, and the Lord will not hear you on that day.
